🍯 Detailed Process of Honey-Red

Harvesting Phase: Honey-Red production begins with the careful selection of coffee cherries at their optimum point of ripeness. Only the red and ripe cherries are harvested, ensuring quality and uniformity of the flavor profile.

Partial Pulping: Once harvested, cherries undergo a pulping process that is not complete, but partial. This meticulous method involves removing only part of the exterior of the cherry, leaving a significant amount of mucilage attached to the bean. This layer, rich in sugars and acids, is crucial to the fermentation process that follows.

Controlled Fermentation: The mucilaged beans are then transported to drying patios where sun exposure is strictly controlled. During this period, which can last 15 to 20 days depending on weather conditions, the mucilage is fermented. This process is not only crucial to developing the coffee's unique flavour notes, but also to ensuring that the beans fully develop their aromatic potential.

Uniform Drying: Drying must be uniform and carefully monitored. Regularity in turning the beans is essential to avoid excessive fermentation or the development of molds. This care ensures that the coffee maintains its quality and organoleptic characteristics.
